This is the absolute easiest, healthy burrito recipe you will find. It’s a meal I often prepare for dinner. It’s full of vegetables, its low fat, can be made as vegetarian or vegan and super flavourful!
The first time I made these burritos was one dinner in winter last year and my boyfriend arrived home from work just as they were ready. He was starving and just wanted food, and when I served these to him he straight away said “This is the best thing you’ve ever made, I love you”. Plus a few moans of happiness as he ate.
So, let that be proof enough of how delicious these burritos are! Try making them with the easy recipe below. Your significant others will love you for it! Also a fun dish to make with kiddies, set them up wrapping burritos or spreading cottage cheese on the inside – keeps them busy and helps you get the food made faster!
I found all these ingredients (plus a $2.70 bottle of shiraz merlot!!) at Aldi here in Australia. I’m so excited about the wine because after living in Berlin and buying lovely wines for under 3 euros, to come home and have the least costly, drinkable wines sitting at $7 (if you’re lucky) was a bit sad. So let’s all cheers to cheap, drinkable wine, yay! (Drinkable, as in, doesn’t choke you on the way down).
Time: 20 minutes total time
What you will need:
- 1/2 green pepper (capsicum) cut into strips
- 1 tablespoon of Extra Virgin Olive Oil
- 1 can kidney beans, drained and rinsed in cold water
- Salt and pepper
- 1/2 diced onion
- 150g cheddar cheese
- 3 tablespoons cottage cheese
- 3 tablespoons sweet chilli sauce
- 3 Aldi whole grain wraps
- 250g chicken breast, cut into small bite sized pieces
- 2 teaspoons smoked paprika (this is a game changer! You’re welcome!)
What to do:
Start by getting your oil hot in a pan. Set stove top to medium and wait until oil begins to sizzle. Throw in the chicken and smoked paprika and cook for 10-15 minutes of medium heat or until cooked through – we don’t want ANY pink bits. Add salt and pepper whenever you like.
Once your chicken is cooking, start prepping your other ingredients. Drain and rinse the kidney beans, chop your veggies & cheese (or grate it) and lay out the wraps, each on their own plate.
Once chicken is cooked, add beans to the pan and stir for a few minutes. Turn off heat.
Spread one tablespoon of both chilli sauce and cottage cheese on each wrap in a long line down the middle. Place 1-3 lettuce leaves on each (I sometimes do 4), throw on the beans and chicken, sprinkle the cheese, green pepper and onion on. Wrap up your healthy burrito by folding in the two ends and rolling.
Serve with your cheap Aldi wine and smile! Enjoy this cheap, easy and flavourful dinner tonight!
Emmie’s Top Tips: If you’re not a meat eater, simply take out the meat – I usually make this just with the beans and it’s incredible. Are you vegan?
